    Instructions
    1. Place all ingredients in the Instant Pot in the order listed EXCEPT for the butter, cream, and garam masala.
    2. Mix the sauce well to incorporate the spices, and then lay the chicken pieces on the top of the sauce.
    3. Close the lid and make sure your toggle is set to sealing. Set manual/high pressure for 10 minutes. When cooking is finished, let natural pressure release take place for 10 minutes, and then carefully release the rest of the pressure.
    4. Take the chicken out of the pot and set aside.
    5. Blend together all of the ingredients left in the pot with an immersion blender.
    6. Add the butter, cut into smaller pieces, and the cream and the garam masala and stir in well. If your family like cilantro, add at this step, and if not, chop some cilantro and serve on the side for those who like it...it really adds brightness and flavor to this dish!
    7. Add the chicken back into the pot. You can break it into smaller pieces but don't actually shred it.
    8. Serve over rice, cauliflower rice, noodles, or just eat plain!

Her Butter Chicken recipe soon became a huge hit with Instant Pot cooks everywhere. Indian cooking can be very labor and time intensive…but the Instant Pot is a game changer! Delicious Indian food in less than thirty minutes means enjoying new dishes and flavors is much easier.

The spice mixture garam masala is the real star here. Garam masala is a combination of cinnamon, cardamom, and cloves, and sometimes other spices that is used often in Indian cooking. It imparts a warm and deep umami flavor to anything it is in…and in this recipe, it is what really makes the dish shine. You can buy good garam masala at most grocery stores, or, you can make your own. Here is Urvashi’s recipe:  Garam Masala

This recipe has become a regular in the rotation of good meals at my house, and I know that once you try it, it will become a favorite in yours!
